How to read these numbers
Purines are compounds found in the cells of almost everything we eat. The body breaks them down into uric acid, and when uric acid stays high it can form the crystals that cause a gout flare. That is the whole reason anyone looks up a purine chart: to know which foods contribute more of the raw material.
The number to look at is milligrams of total purines per 100 gramsof food. That unit matters. A chart that says “sardines are high” is useless when you are deciding between a small tin and a main course; 100 g of sardines at 82 mg and 100 g of dried anchovy at 1,109 mg are both “fish”, and they are not remotely the same decision.
The six levels
Every cut line below is one a published guideline already draws. The first three come from the Chinese NHC 2024 guideline; the 200 mg and 300 mg lines come from the Japanese gout treatment guideline, which separates its high band from its extremely-high band there.
We use six rather than the NHC’s four because its top band alone holds a quarter of this database across a nine-fold range — cooked chicken breast at 368.7 mg and dried anchovy at 1,109 mg would otherwise share a colour. Combining two guidelines into one scale is our editorial decision, and no single authority publishes all six; the Breeze app still uses the NHC’s four bands, which these refine rather than contradict.

The concentrated end of the database: dried seafood, yeast, stock powders and liver. Almost everything here is eaten in grams rather than portions.

Preparation changes the number more than people expect
Drying and grilling concentrate purines because they remove water: cod measures 71 mg fresh and 230 mg baked, and anchovy goes from roughly 304 mg fresh to 1,109 mg dried. Boiling can push the other way, leaching purines into water you then pour away — which is why boiled tofu sits far below the dried soybean it was made from. Any chart that lists one number per food is hiding this. Every row in this database names the preparation that was actually measured.
Portion size beats category
People tend to sort foods into “allowed” and “banned”, but purines arrive by the gram, not by the label. A 30 g sprinkle of dried shrimp on a bowl of noodles contributes around 66 mg; a 250 g plate of chicken breast, which looks like the safer choice, contributes about 520 mg. Each food page works this out for common serving sizes so the comparison is in front of you.
What the number cannot tell you
Purine content is a property of food, not a prediction about your body. Most uric acid is produced internally rather than eaten, and the effect of diet alone on serum urate is modest compared with urate-lowering medication. Alcohol is the clearest example of why the chart is not the whole story: beer measures under 15 mg per 100 ml, which looks harmless, yet it is consistently associated with flares because alcohol also slows how the kidneys clear uric acid. Use these numbers to make comparisons, not to make medical decisions on your own.

Questions people ask about purine charts
What counts as a high-purine food?
Six bands, measured per 100 g of food: low under 30 mg, fairly low 30–75, fairly high 75–150, high 150–200, very high 200–300 and extremely high above 300. The first three cut lines are the Chinese NHC 2024 guideline's; the 200 and 300 mg lines come from the Japanese gout treatment guideline, which draws its high band at 200 and its extremely-high band at 300. Combining them is our editorial choice, but every threshold is one a guideline already draws. Thresholds differ substantially between countries, which is the real reason charts disagree — the common English three-tier scheme calls everything from 50 to 150 mg moderate, and the Japanese guideline does not call a food high until 200 mg. Every food page shows how that food is banded under all three national schemes.
Where do these purine numbers come from?
Every entry keeps its own citation. 398 foods, mostly Chinese ingredients and dishes, come from appendix 1 of the Dietary Guideline for Adults with Hyperuricaemia and Gout (2024 Edition) published by China's National Health Commission. The other 432, mostly Western and international foods, come from the USDA and ODS-NIH Database for the Purine Content of Foods, Release 2.0 (2025). Nothing is estimated, averaged across sources, or mapped by name similarity.
Why is the cooked version of a food often higher than the raw one?
Cooking removes water, so the same purines end up concentrated into less weight. Cod is 71 mg raw and 230 mg baked; anchovy is about 304 mg fresh and 1,109 mg dried. Boiling can also move purines the other way, into the cooking water — tofu boiled for three minutes measures far lower than dried soybean. Always check which preparation a number refers to, which is why every row here names it.
Does a low-purine diet lower uric acid much?
Most uric acid is made by the body rather than absorbed from food, and published estimates for what a strict low-purine diet achieves on its own are modest — typically a small fraction of what urate-lowering medication does. Diet is one input among several, which is why the Breeze app tracks readings, medication and flares together rather than food alone. Your doctor is the right person to weigh these for your situation.
Are the values per 100 g or per serving?
Every figure on this site is milligrams of total purines per 100 g of the food as measured. Each food page also shows what that works out to for common serving sizes, because a 30 g portion of a high-purine food can contain fewer purines than a large plate of something in a lower band.
Is the database free to use?
Yes. Every food page is free and needs no account. The same 830-food database ships inside the Breeze iPhone app, where it works fully offline and can be searched in English, Chinese or pinyin.

The two sets are kept separate rather than blended. Where both measured the same food, the guideline value is used for the Chinese entry and no attempt is made to map one language's food names onto the other's — approximate name mapping is the most common reason purine apps end up quoting a number for the wrong food.
